Is there any way of upgrading to a 12v battery? I cannot find any lights that run off 6v. I know there are plenty of 12v available that are the same size but I am worried about breaking all sorts of bits by just switching them out

You won't blow 12V bulbs in a 6V system, but you will blow 6V bulbs if you supply them with 12V power. You can upgrade to a 12V battery but it's a big job. You'd likely need to get the alternator re-wound to deliver 12V power and then you'd need to swap everything that is currently 6V: headlight, blinkers, horn, dash lights and likely tons of other little bits.

Yeah they're pretty easy to find still. You can use eBay or other online shops like this.
